As with every other card in the Legal Nomads line, this card went through two sets of translations for accuracy, both by native speakers with celiac disease familiarity.

    I have celiac disease, which means that I will get very sick if I eat gluten. Gluten is found in wheat, barley, rye, spelt, and oats – so predominantly in bread and other products made from flour, but also can be also present in soups, some bouillon cubes, and soy sauce. I cannot eat noodles, pasta, pierogi, kasha, bread and cookies. I cannot eat processed meats with flour or breadcrumbs, breaded meat, fish, or vegetables, as well as sauces and soups thickened with flour. When using spices, I must confirm on the label that they do not contain gluten.

    Strict gluten free diet is a necessity for me. The disease also affects me if I eat food that is cooked on a contaminated surface. For example: if my meat is cooked on the same pan as breaded meats without being cleaned, the leftover crumbs will be enough to get me sick. Unfortunately, even a sprinkle of flour in the sauce or soup will make me ill for days.

    Can you please tell me what can I eat in your menu or on your kitchen that does not contain wheat, barley, spelt or rye and will be prepared safely?

    I can eat food containing buckwheat, corn and corn flour, plain rice and rice flour, potatoes and potato flour, millet, tapioca, eggs, meat, chicken, fish, vegetables, fresh fruit or cheese – so long as they are not cooked, stewed with, or fried in the ingredients in the first paragraph.
